Fair Craziness

The local fair starts on Thursday and this past week we've been getting entries and such ready for it. I'm entering 18 pictures, and these Zucchini brownies!

Oh, wow, those look SO good!! Is the recipe secret, or would you mind sharing it? We've got TONS of zucchini and I want to make the most of it. All I know is zucchini bread!!

It's certainly no secret! I even have the recipe all typed up because I had to enter it with the brownies. I think they're really good personally, enjoy and tell me how it goes! Here it is:

Chocolate Zucchini Brownies
Makes one 13x9 pan



½ cup Butter
½ cup Oil
1 ¾ cup Sugar
2 Eggs
1 tsp. Vanilla
1 tsp. Lemon Juice
1 ½ tsp. Vinegar
½ cup Milk
4 tbsp. Cocoa Powder
2 ½ cup Flour
½ tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
2 cups grated un-peeled zucchini
1 pack Semi-Sweet Chips

Combine butter, oil and sugar then mix well. Add eggs one at a time, then add the remaining wet ingredients, excluding the zucchini. Mix together cocoa, flour, salt, baking powder and soda together in separate bowl, then slowly pour into wet mixture while mixing. Add zucchini one cup at a time, mix well. Grease or butter pan, pour the batter into. Sprinkle ½ pack of Hershey's chocolate chips on batter. Bake at 325 degrees for 40-45 minutes in a 13x9 pan. Let them cool, then cut into shapes.



White Chocolate Drizzle (optional):
Melt ¼ cup of white chips in a decorating bag (or zip bag), melt in microwave and pour overtop brownies.
